Chicken curry

Tasty and healthy recipe that serves three people!

Serves three adults.

Ingredients: One cooked chicken, five mushrooms, one pepper, one onion, one clove of garlic, two dessertspoons of medium curry powder, one teaspoon of veg oil, one chicken stock cube, one dessertspoon of flour.

1- Remove the chicken off the bone
2- Slice mushrooms, peppers, onion and garlic
3- Dissolve the stock cube in ½ pint/275mls of boiling water
4- Heat the oil in a frying pan and gently fry the onions and garlic
5- Add mushrooms and pepper to the frying pan and cook for two-three minutes
6- Add curry powder and flour to the pan and cook for one minute stirring all the time
7- Stir in the stock and chicken pieces.
8- Reduce heat and cook slowly for 10 minutes without stirring
9- Serve with boiled basmati or whole grain rice. (follow instructions on packet to cook)
